Starting vegan does not have to involve twenty new products. Adapting a few familiar meals is often easier. What matters is what replaces the animal foods removed: adequate meals, suitable protein sources and reliable nutrient planning.
Vitamin B12 belongs in the plan from the start
The German Nutrition Society recommends regular, ongoing vitamin B12 supplementation with a vegan diet, together with checks of nutritional status. Other potentially critical nutrients, such as iodine, calcium and protein, also require attention. This does not mean everyone needs numerous individual supplements on speculation. [1]

The table provides ideas, not a quantitatively calculated daily plan. It shows how an identifiable protein source can remain part of an ordinary meal. Actual provision depends on portions and the entire food selection.
Keep shopping manageable
Initially choose two useful protein sources, one or two grain staples, and vegetables and fruit you enjoy. Precooked legumes and simple frozen vegetables can make organization easier. A small list that actually gets cooked is more useful than a stockpile of unfamiliar specialist ingredients.
Check nutrition information for plant drinks used regularly. A color similar to milk does not guarantee similar protein or calcium provision. A drink used for flavor in coffee also serves a different purpose from a substitute consumed regularly in larger amounts.
What makes the beginning unnecessarily difficult?
Additional rules such as exclusively raw, gluten-free or particularly low-fat are not automatic requirements for vegan eating. Consider whether a restriction is genuinely necessary. Nor must you give up foods enjoyed for pleasure or perfect every meal.
Qualified nutritional support is particularly important during pregnancy or breastfeeding, for children, or with illness. Persistent exhaustion or unintended weight loss should not be accepted as a normal achievement of the transition. Do not independently stop medically recommended supplements or treatments.
